Grain Free Granola

I don't know about you, but I grew up in the cereal era.  I miss cereal in my life and sometimes it's necessary! This granola is the perfect substitute ;).

Ingredients

1C Pepitas (Pumpkin Seeds)
1C Sunflower Seeds
1C Coconut Flakes
1C Almonds (Coarsely Chopped)
1C Walnuts (Coarsely Chopped)
1C Pecans (Coarsely Chopped)
1/4C Almond Butter
1/4C Honey
1/4C Maple Syrup
1 Tbsp Cinnamon
1 tsp Salt
2 Tbsp Coconut Oil

 

Directions

1. Preheat oven 325 degrees
2. Melt almond butter, honey, maple syrup, cinnamon, salt, & oil in saucepan over medium heat.
3. Mix seeds, nuts, and coconut in bowl.  Can substitute, mix, and match nuts and seeds and berries to your liking.
4. Pour liquid mixture over nut mixture.  Stir to coat.
5. Spread in baking sheet and bake for 20 min.

Easiest Peanut Butter Cookies

Because sometimes you need something sweet! These are the easiest Peanut Butter Cookies and they taste as good as they look. Whip these up for a sweet treat when you crave peanut butter. Pair with our Almond Milk recipe and you are all set for a gluten-free treat!

Ingredients

1 Cup Peanut Butter
1 Cup Brown Sugar
1 Egg
1 tsp Baking Soda
1 Cup Chocolate Chips 

Directions

1. Preheat oven to 350° +
2. Mix all ingredients, except chocolate chips in a mixer
3. Fold in chocolate chips
4. Bake for 9 minutes
